Simple sponge cake

I love sponge cake. It’s light, airy and delicious. This is my go-to recipe for a simple sponge cake.
Ingredients
Contents
- 1 cup (2 sticks) unsalted butter, softened
- 2 cups granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour, sifted (or 1 cup cake flour and 1 cup cornstarch)
- 2 teaspoons baking powder
Mix the ingredients together until they are just combined.
- Mix the ingredients together until they are just combined.
- Don’t worry about lumps, and don’t overmix! The more you mix it, the tougher your cake will be when it’s done baking.
- Preheat your oven to 350F (175C). Line an 8×8 inch pan with parchment paper so that all four sides are covered by at least 1/2 inch of paper hanging over each edge of the pan; this makes for easy removal later on in case you want to cut out shapes from your sponge cake or make layers with frosting between them. Bake for 20 minutes until golden brown on top, then remove from oven and let cool completely before slicing into squares or rectangles for serving!
Grease a cake pan and line with parchment paper.
Grease a cake pan and line with parchment paper. If you don’t have parchment paper, use a non-stick pan. Pour the batter into the pan and spread it evenly. Bake it at 350 degrees Fahrenheit for 30 minutes or until golden brown on top (this will depend on how large your cake is). Allow it to cool before removing from the pan
