Paul Cullen to open Grain On The Rocks chef dinner series April 11

Grain On The Rocks Chef Jess Wallen and local Chef Paul Cullen will partner for the inaugural Duos chef dinner series event Sunday, April 11.

Cullen, the owner and operator of Paul’s Kitchen in Lewes, creates in-home dining experiences. He has served 10,000 guests in kitchens worldwide, including Nashville, Chicago, Italy and Costa Rica. He recently expanded his restaurant to include room for another of his loves, live music.

Wallen and Cullen will be coming out of the kitchen throughout the dinner to share stories and participate in a question-and-answer session with attendees during dessert. A former bass guitarist with the rock group Bad Company, Cullen will perform a concert featuring relaxing originals and jazzy takes after dinner. 

Each course will be paired with a wine tasting. 

Easy On My Soul, the first course, will include chicken parmesan sausage, sliced salami, prosciutto, assorted cheeses, and harvest fruits and vegetables. It will be accompanied by a drunken fig compote and whole-grain mustard with toast points. Le Vigne di Alice Ose Sparkling Prosecco Rosé will be the paired wine.

For the next course, Ain’t It Good, meatballs by Chef Jess will be served over a spring caprese of fresh tomato and mozzarella with a drizzled duet of balsamic and basil pesto. The paired wine will be Masseria Frattasi Falanghina del Taburno DOC.

Can’t Get Enough, the main course, will feature a bed of fresh polenta engulfed in a lightly spiced cold brew gravy and topped with grilled gulf shrimp and Chef Paul’s famous broccoli rabe and provolone-stuffed sausage, finished with a garnish of peppers and broccoli rabe. Paul Tagliaferro Cullen Artist Series Rosso will be the paired wine selection.

The Rock ‘n’ Roll Fantasy final course consists of cinnamon-sugar dusted “cigars” stuffed with a spiced sausage filling and finished with a delicate strawberry and honey drizzle. Cantina di Negrar Le Roselle Valpolicella Ripasso Classico Superiore will be the paired wine.

To maintain proper social distancing, tables will be very limited for this event. Tickets are $150 for a table of two and $300 for a table of four, which includes four courses and wine tastings. Additional beverages can be purchased throughout the evening.
